Not so Lazy Sunday

I’m feeling very domestic (and a little sore) this morning. After taking Tyler to the skating rink for his birthday last night, I didn’t imagine I’d be doing a whole lot today. Well, since he left this morning to go backpacking, the kids and I had the place to ourselves. SO….we made the most of it.

First, I made up a double batch of Zucchini Chocolate Chip Muffins in an attempt to use up some of that giant bowl of shredded zucchini in my fridge. These now reside in my freezer and will feed us all week!

Then, WH and I did some basket painting while Helo napped. I’m always looking for activities to keep him quiet so he doesn’t wake up his brother. In this case, it also helped me get something done.

Once Helo was up we went on a walk. We picked up a movie and fresh kettle corn for movie night tonight, yarn for some new hats and corn dogs for lunch!

Back at the house, I actually managed to get BOTH monsters down for a nap and started on the first baby hat! I plan to make one for each of my monsters and another for my brother’s new guy. I spent most of their nap winding the hanks into balls (my least favorite part of knitting) but managed to at least get cast on.

Then it was time for movie night. WH had a couple friends over and we ordered pizza and all was nuts. And it was great. No one had any idea what happened in Tarsem’s “The Fall” because the kids were so loud, but we were able to mildly relax with some wine and none of the kids went home with any serious injuries so we’ll call it a success!

Oh! And I also got some clothes from a friend that ACTUALLY FIT ME! Score.


Drowning in Cherry Tomatoes (and zucchini)

Alas, summer is winding down,   **sniffles**  but our garden is still churning out the tomatoes and zucchini fast than we can eat it! (Mostly because my children refuse to let me cook real meals and we end up eating pizza.)

Well, since my parents are here visiting I have some time (and free hands!) to make use of some of these goodies! So, here’s how I’m going to use them up.

First, I made a giant standard issue Italian Pasta Salad (with, gasp!, fresh cherry tomatoes) last night. This will be lunches for the rest of the week. Yum.

Tonight, I’ll be trying out this beast:

Sauteed Chicken with Yellow Grape Tomatoes ,  which I’ll probably toss over some pasta.

Seems simple enough. Obviously I’ll be using cherry tomatoes.  🙂






For lunch one day this weekend I figure I’ll make these guys:

Perhaps my 3 year old might even try these “Mini Pizzas.”

I’ve got some fresh basil to throw on top, which will be a nice complement.

To finish off the rest of the tomatoes I figure I’ll just roast them with a little olive oil and garlic and just start tossing this in with everything!

A lot of this I imagine I’ll be able to freeze for later. LOVE having this stuff around to defrost for a quick breakfast for screaming monsters.

I’ve been obsessing lately over all the awesome looking muffin pan meals I’ve come across on Pinterest.  I tend to bake a lot of zucchini muffins and freeze them for quick breakfasts but I’m finding all these fun new recipes to make use of my muffin pan in between!

This reminds me a lot of the BBQ Cups we used to do all the time when I was younger. This used to be one of my favorite things, though it can hardly be considered healthy.  🙂
